This started as a sandwich and just got out of hand. I had some wheat sub buns I was trying to use up and I’ve been craving more ruben-ish stuff ever since I had a vegan Ruben at our local co-op. We had gotten some free expired-but-still-good vegan mayo so I mixed that with a little ketchup and relish to make the dressing and put sauerkraut ob the other side. Rather than using some sort of meat substitute I filled the sandwich with grilled veggies we had dumpstered… Onion, garlic, broccoli, cauliflower, and red pepper. I had some jalapenos my niece grew so I topped everything with those. My sandwich ended up bigger than my plate, but that’s not a problem in my world!
