Anybody that knows me knows I eat a ton of tacos. Yesterday was no exception.
We found several avocados the other night. Unfortunately only a couple of them turned out to be good, but between those and the package of cherry tomatos we found we were able to make a great batch of guacamole.
The “base” of the taco is lentil taco-“meat”… not scavenged but still inexpensive, healthy, and delicious. I cooked lentils in the rice cooker until soft, then sauteed them with taco seasoning and tamari until the excess water is cooked off.
I also grilled up some potatoes from a friend’s garden and dunpstered broccoli to go on the tacos. I guess the grilled veggies were good because my roommate/dunpster-diving-accomplice ate enough of them straight from the pan while I was making the lentils that she didn’t eat any of the actual finished tacos!
